“The Hills of Brindisi” (the name of the DOP – protected denominator of origin) is the name of the gentle slopes that rise and fall around Ostuni. These fertile yet sparsely cultivated hills protect our olive groves from the scirocco (the humid winds that arrive from North Africa) whilst the fresh dry sea breezes of the Adriatic keep the trees strong and healthy. The soil is rich in iron and calcium, red upon the white stone and there is no stagnation whatsoever. These are the perfect conditions for secular olive trees, the trees that gift us with the sweetest oil in the world.
